When Mom started cooking (yes, I said when she started), she cozied up with the crock pot. And for good reason too! It's super easy and doesn't require a lot of prep.
This is my all time favorite crock pot recipe. It's from the Fix-It and Forget-It Cookbook.
Chicken Tortilla Soup
Serves: | 8 (at least) | ||||||||||||
Ingredients: | |||||||||||||
4 | Chicken Breast Halves (frozen or thawed) | ||||||||||||
2 | 15 oz. cans beans (Ranch, Pinto, Black-your choice) | ||||||||||||
2 | 15 oz. cans Rotel Tomatoes | ||||||||||||
1 | Cup Salsa (I use Pace, but any will do) | ||||||||||||
1 | 4 oz. can chopped green chiles | ||||||||||||
1 | 14 1/2 oz. can tomato sauce | ||||||||||||
tortilla chips | |||||||||||||
grated cheese | |||||||||||||
sour cream (optional) | |||||||||||||
How To: | |||||||||||||
1 | Combine all ingredients except chips and cheese in large | ||||||||||||
slow cooker. | |||||||||||||
2 | Cover. Cook on low heat for 8 hours. | ||||||||||||
3 | Just before serving, remove chicken breasts and slice into bite | ||||||||||||
size pieces. Stir into soup. | |||||||||||||
4 | Ladle soup into bowls. | ||||||||||||
5 | Top with cheese, chips, and sour cream (optional). | ||||||||||||
6 | Enjoy!!! |
