Chicken Tortilla Soup

When Mom started cooking (yes, I said when she started), she cozied up with the crock pot. And for good reason too! It's super easy and doesn't require a lot of prep.


This is my all time favorite crock pot recipe. It's from the Fix-It and Forget-It Cookbook.

Chicken Tortilla Soup


Serves:
8 (at least)



Ingredients:



4 Chicken Breast Halves (frozen or thawed)

2 15 oz. cans beans (Ranch, Pinto, Black-your choice)

2 15 oz. cans Rotel Tomatoes

1 Cup Salsa (I use Pace, but any will do)

1 4 oz. can chopped green chiles

1 14 1/2 oz. can tomato sauce


tortilla chips


grated cheese


sour cream (optional)

How To:


      1 Combine all ingredients except chips and cheese in large

slow cooker.






      2 Cover. Cook on low heat for 8 hours.





      3 Just before serving, remove chicken breasts and slice into bite

size pieces.  Stir into soup.





      4 Ladle soup into bowls. 





      5 Top with cheese, chips, and sour cream (optional).





      6 Enjoy!!!
