Coconut Pie

Hope you had a Blessed and Happy Easter Day.  We started our day at Church with a moving Easter service, then had dinner out our house with family and friends.  Ham and all the fixings with Coconut Pie for dessert.  This is a recipe that came from my Mother-in-law and is a long time favorite.  It is extremely easy and scrumptious!



Coconut Pie

Ingredients:   1/2 cup margarine
                     2 cups sugar
                     3 1/2 tablespoons flour
                     1 1/2 cups milk
                     2 eggs
                     1 tablespoon vanilla
                     1 - 7 ounce package of coconut
                     2 - unbaked pie shells

Preheat oven to 350.  Cream margarine, sugar and flour.  Add milk, eggs, vanilla and coconut.  Blend well. Shield edges of pie crust with tin foil, bake for 30 minutes.  Remove foil and bake 10 more minutes.  Top will be golden brown when finished.


Here's a picture of the pies with the tin foil shield - I pull off a sheet of tin foil that will go completely around the pie, then cut it in half.  Fold the half in half (does that make sense?) and wrap it around the edge.

    I am very new to blogging and sometimes in my excitment to post, I do an incomplete job...
    I had actually started the banner in March, and blogged on and on about the steps to create the banner, but then didnt completely finish it when I thought I would...

    Any way, the red fabric is actually a tablecloth from Walmart...I wanted it for my dining table, but they didnt have one to fit...but I bought it anyway, because red is my fave color and it looked so like burlap, and burlap is so popular. The painted part is just plain ole craft paint, I did have to go over it a couple of times to get color saturation...which was needed as a base for the letters. The letters I just freehand painted on, using a small brush and black paint. I did a shadow effect around the letters with a gray Copic.

  2. I've seen all the great burlap creations lately and have been wanting to try something. Love that you made your banner from a tablecloth. You did a great job on the lettering - very polished with the shadow effect.
