It is a great week night favorite and takes about an hour from start to finish.
CHEEZ-IT Chicken Makes 4-5 servings
3-4 Chicken Breasts (slice each breast into thirds to make strips)
1 1/2 cups crushed CHEEZ-ITs (measured after crushing)
1/2 cup flour
Tony Cachere's Creole Seasoning to taste (I use about a teaspoon)
1 cup milk
1 egg
3/4 stick of butter or margarine
Preheat oven to 350°. Melt butter and pour into 9 x 13 glass pan. Place CHEEZ-ITs into ziploc sandwich bag and crush with a rolling pin. Pour CHEEZ-IT's into measuring cup until you reach 1 1/2 cups. Add 1/2 cup flour.
Add Tony Cachere's seasoning and stir. Dump mixture on to a paper plate. In a shallow bowl, mix milk and eggs. One by one, dredge chicken pieces in milk mixture, then coat with CHEEZ-IT mixture. I've found it easiest to press the chicken down in to the mixture with a fork, then turn the piece over and repeat. This helps the mixture stick to the chicken.
Place coated chicken into pan, bake approximately 40 minutes until the coating is crispy.
That's it!!! And let me tell you, it is super delicious! There is always a fight over the crispy, yummy crumbs left in the bottom of the pan too! Leigh's Dad only made the mistake of cleaning out the pan once, and now knows that his life will be shortened if he does that again!!!!
